THE BEAR CLAW Dutch Oven

Basic Bear Claw from My Own Recipes 

2 c all purpose bleached whete flour 

3/4 teaspoon of Baking Powder 1 1/4 teaspoons Baking Soda , 1 1/4 teaspoon table salt ( USA Morton’s is very good and inexpensive), 

I packet of Flieshmen’s Dry Yeast.  Mix yeast, salt and luke warm water - in a large mixing bowl - just 1/4 c. tepid  tepid warm water. Desolve yeast - salt, and water well, before adding the flour, with 1 1/2 c. pure granulate sugar, and 2 tbs. Vegetable oil. 

Slowly mix 1/2 cup more luke (not hot - just warm on the wrist)  tepid warm water as needed with a possible need for just a little more Luke tepid warm water - until the flour is mixed into a ball of dough - 

Mix into a doughy ball form and then assure to sprinkle lite flour over the lucious sweet dough ball, and cover with a extra clean non lint - specially made for cooking - kitchen towel extra dry.


The dough ball needs to rise-  and may take upto three hours to rise into a larger vulumeous ball. Doubling in size is possible depending as yeast will double in just three hours of a dough ball does -on your altitude of your city. Once the ball of dough has risen, then take it carefully all out of the large bowl and - place the dough on a pre - floured counter top or a cutting board large or a table. Flour sprinkled on the table will prevent the dough from sticking to the surface-   

Cut the dough into four eaqual sizes of dough and roll the dough into balls with extra care not to over handle them.  The dough will rise again if you flour a sheet pan - aluminum baking pan - set in an empty cool over wrack to rise a second time -  three more hours. 

In a small sautee’ pan -  toast the pecans and the walnuts seperatly. 

Roasting  is with a hot pan and no oil or butter - just a dry pan and add the pecans and sautée’ watching closely until a fine lite aroma smell begins while tossing the pecans in the pan while roasting- then remove to a clean dry plate and then toast the walnuts. 

pecans 8 tbs and walnuts 8 tbs. Should be enough for all four balls.

Meld butter 2 tbs. In a large sautee pan at a low heat, then flatten one round dough into a flat circle with some stretching with your fingers to press gently as you assure flour on your hands - extra clean washed well with dish soap rinsed - extra well- then flour on hands too -  press perfect flat looking rounds - of dough -  place chop some walnuts and pecans, 1/8 c, each nut, and 1/8 c. half sliced cherries, Maracaibo cherries, or a cherry pie filling cherry from a tin- comstock makes a quality tin of fruit cherry filling, 

Add a good drizzle of pure honey and

.pre soak for three hours -  a 2 tbs rasins, 2tbs cranberry pre - soaked in cherry juice (reserved from a marachino  jar of cherries ) then drain in a seive wire bowl made for cooking. Chop and sprinkle into the dough ball round. 

  The  round of dough filled in a delight of fine chopped 

fruited and nutted excellence. Very exciting. 

Fold the dough in half - with a small sharp pairing knife -  cut the edge of the bear claw into four claw like forms as to cut on the curved round - and not the strait folded size. 


So, you have your bear claw cut - and with extreme care- lift the claw to the low heat sautee pan with a double trivit under the pan like a DUTCH OVEN with a cover. Watch closely not to burn the bottom and then assure to then turn the bear claw over to a golden brown on each side. 

Topping - a honey drizzle with pure clover honey 

 SUE BEA BRAND is a good USA brand. 

Chopped walnuts and Pecans lightly on the top are incredible if taken time to toast a just a few more. 

Serve freshly warm- with a fine bowl of whipped cream to spoon on top at your table is always extra special.
